35 mins prepServes 4
Beef kabsa is a delicious and flavorful rice and meat dish that is easy to make. This recipe features tender beef cooked in a pressure cooker, then fried with peppers and onions, served over fragrant basmati rice seasoned with Kabsa spices, curry, and turmeric.
BEEF PREPARATION: Take the beef and cook it with 0.5 teaspoon of salt, 1 tablespoon of kabsa spice, and 0.5 cup of water in a pressure cooker on the meat setting for about 45 minutes. When the beef is done, take it out. In a pan, add 2 tablespoons of oil and fry the beef for a couple of minutes. Then, add the red and green peppers, 1 large onion (chopped), 0.5 tablespoon of chicken bouillon, 0.5 tablespoon of kabsa spice, and 0.5 teaspoon of salt. Cook for about 4 to 5 minutes on high heat.
RICE PREPARATION: Wash and soak the basmati rice for about 20 minutes. In a separate pot, heat 3 to 4 tablespoons of oil. Add the small onion (chopped), garlic (minced), and the 0.5 tomato (diced); cook for a couple of minutes. Drain the soaked rice and add it to the tomato, onion, and garlic mixture. Then add 1.5 tablespoons of kabsa spice, 1.5 tablespoons of chicken bouillon, 0.5 tablespoon of curry powder, 0.25 teaspoon of turmeric, 0.5 tablespoon of salt, and 2.5 cups of water. Cover the pot and let it cook on high heat until the water evaporates. After the water has evaporated, lower the heat to very low, cover, and leave it to cook for an additional 10 minutes.
SERVING: When the rice is done, serve it by placing the rice on a plate first, then add the beef mixture on top. Optionally, top with some almonds and serve.
